Many Spanish people view paella as the national dish. It is served as a main course. The main ingredients are short grain rice, garlic, parsley, olive oil and saffron. The best paella is those cooked fresh. You can get many types of paella, vegetarian, seafood, chicken and sometimes rabbit.
It is cooked in a very large flat frying pan on an open fire or gas stove top. A final touch is when the grains on the bottom of the pan (only the bottom) have a crunchy, savoury crust known as socarrat.
