Dad and I caught a bus to a town just out of Madrid called Segovia. Segovia is an old Roman town and was once the main city in the kingdom. It has a massive Roman aqueduct in the centre of town. Segovia is also famous for the traditional Spanish dish of Cochinillo Asado or suckling roast piglet! They have been cooking this dish for many centuries.
It is a small pig that is slow roasted using only water and salt added and cooked for hours. It is so soft and tender they use the edge of a dinner plate to cut it into bits, not a knife!
